Peanut Noodles
Ingredients
- 1/3 cup creamy peanut butter
- 4 cloves garlic, minced
- 2 Tablespoons grated ginger
- 2 Tablespoons soy sauce
- 1 Tablespoon brown sugar
- 1 Tablespoon sesame oil
- 1 Tablespoon black vinegar or rice vinegar
- 1 Tablespoon chili oil
- 1/4 cup chicken broth
- 8 ounces ramen noodles
- 1/2 cup dry roasted peanuts, chopped
- 3 scallions, finely chopped
Directions
Whisk together the peanut butter and chicken broth in a bowl until well blended. Whisk in the garlic, ginger, soy sauce, brown sugar, sesame oil, vinegar, and chili oil. Add to a medium saucepan and cook over medium heat, until it just begins to bubble. Reduce the heat to low.
Cook the noodles according to the package directions. Drain thoroughly in a colander. Add to the sauce along with the peanuts and scallions, and toss to combine. Serve warm.
